I’ve tried different diets over the years. I found that they all work. The key is sustainability. Can it be sustained? If not, it’s a fail. I have coworkers doing Keto — on again, off again. In other words, not sustainable. The levels of fat (75%) are mind boggling. Downright scary.

We promoted the low fat, low cholesterol, low salt mantra at the hospital (cardiac) for years. Now, all diets have been eliminated from our educational material, except for the DASH diet (dietary approaches to stop hypertension). Now the mantra is correct fats, cholesterol from food has nothing to do with your cholesterol level, and correct salt (not the one with the girl with the umbrella). There are actually protocols that use salt to treat hypertension.

In 2004, Dr Duane Graveline wrote a book called Lipitor, Thief of Memory. I became an RN in 2005. Sometime ago I became aware of his book and his website spacedoc.com I’ve never been a proponent of statin drugs (with exception). And I always felt Low Cholesterol diet was totally wrong. I felt vindicated in 2015 when the FDA finally came out with a footnote buried on page 91 of the 572-page Scientific Report of the 2015 Dietary Guidelines Advisory Committee: “Previously, the Dietary Guidelines for Americans recommended that cholesterol intake be limited to no more than 300 mg/day. The 2015 DGAC will not bring forward this recommendation because available evidence shows no appreciable relationship between consumption of dietary cholesterol and serum (blood) cholesterol, consistent with the AHA/ACC (American Heart Association / American College of Cardiology) report. Cholesterol is not a nutrient of concern for overconsumption.”

Wow, when you stated the fear factor with using and consuming fat, I totally identified with this…. Bacon fat, what… Coconut oil, what… Beef tallow, what… Butter, what… Ghee, what… When I worked at McDonald’s in the early 70’s we used to filter the beef tallow every night from the deep fat fryers and replace it on a schedule… Big 5 gallon tubs of tallow that we scooped out with a big spatula…
