This is grain free and refined sugar free. I have tried several Date Ball recipes and this one is by far the BEST. Cinnamon is good for reducing inflammation and regulating blood sugar. Ginger helps soothe digestion concerns. The nuts are a healthy fat. There is also great fiber in this recipe. It will store in an airtight container in your refrigerator for a least a week.
Makes Approximately 16 to 18 bites
1/4 cup pecans
1//4 Cup cashew
1/2 cup walnuts
1 cup (pitted dates (about 15 dates)
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground allspice
Dash of sea salt.
Add nuts to food processor with the chopping blade attached. process until finely chopped into small pieces, about 30 seconds. Remove from food processor and set aside in a bowl.
Add PITTED dates, vanilla, cinnamon, ginger, allspice and sea salt to food processor. Process on high until the mixture forms a paste, about 1 minute.
Add nuts back to food processor and process until mixture is well combined, about 1 minute.
Pour the mixture back into the bowl and using your hands, form the dough into 1 inch balls.
Serve immediately or refrigerate until ready to serve.
